Beetroot Jelly using agar agar

Beetroot Jelly? Does it sounds wierd? Trust me it tastes so good if you love beetroot.Even if you don’t, try this. You will start loving it 😍.You want to give your kid healthy choice of eating their favorite snack, then try this, even no gelatin.You will never get store bought jelly again.

So here we go with the recipe. Hope you will try this.

Ingredients

Beetroot Juice – 1/2 cup ( see notes)

Sugar – 1 tbsn

Agar Agar – 3/4 tsn

Method

  • Take all ingredients in a pan. Heat it thoroughly till agar agar and sugar completely dissolved.
  • Have to keep stirring constantly.
  • When it’s completely dissolved, remove from heat and pour it in your moulds or a bowl. ( I did it in my mini muffins pan)
  • When it comes to room temperature, keep it in fridge till sets.
  • You can just scoop it from your moulds.
  • Serve chilled.

Notes

  1. For Beetroot Juice, I microwaved peeled beetroot chunks till soft. Blend it with little water in a blender and strain it.
  2. You can avoid sugar if you want. Beetroot itself have some sweetness.

 

Papaya halwa

As Diwali is around the corner , everyone will be in a spree to making sweets and savouries. I here give you a sweet recipe to add in your list.😊

To my friends who doesn’t know about Diwali, it is a festival of lights. There is different stories why Diwali is being celebrated. But the basic moral is , it is to celebrate the winning of good over evil. While the ladies in each home were busy making sweets and savouries, kids will be busy in firing crackers. Everyone will be sharing wishes and sweets .

Now coming to the recipe, this is a different halwa from the usual one. Only with handful of ingredients you get delicious halwa.Yes, this is papaya halwa. When I had papaya which was not so sweet, I came with the idea of making halwa with it. Totally loved it. Hope you will give this a try this festive season.

Ingredients

Papaya puree – 4 cup

Sugar – 1 cup

Cashews – few

Raisens – few

Ghee / Clarified butter- 2 tbsn

Method

  • In a heavy bottomed pan heat a tbsn of ghee , fry cashews and raisens till golden. Keep aside.
  • In the same pan add papaya puree. Let it cook in medium flame till it becomes to half in quantity. Stir occasionally.
  • When it becomes half, add sugar and cook till it gets thickens and leaves the sides of the pan.
  • Then add remaining ghee and fried cashews and raisens.
  • Switch off. Serve warm or cold.

Notes

  1. When you cook papaya puree, it will splatter a lot. So be careful when you stir. Try to use long laddle.
  2. Adjust sugar as required.

Orange nutella mug cake( egg less, butter less)

We all learn from our mistakes, it’s applicable in every cases. I have made chocolate mug cake using eggs, but without eggs haven’t tried. I once tried strawberry mug cake, but it was super duper flop😞.

This time I again tried orange mug cake🍊. I went along my intuition. It doesn’t disappoint this time. It is dense, fudgy , full of orange flavour cake which satisfies your crave just in minutes. The orange juice itself gives nice moisture to it. Hope you like it.

Ingredients

Whole wheat flour – 4 tbsn

Orange juice – 4 tbsn

Sugar – 2 tbsn

Nutella – 1 or 2 spoons as required

Olive oil – 3 tbsn

Baking powder – 1/4 tsp

Orange zest – 1 tsp grated

Method

  • In a bowl add whole wheat flour, baking powder and sugar.
  • Mix thoroughly.
  • Add oil, mix well.
  • Add orange juice and orange zest.
  • Mix without any lumps.
  • Transfer it to butter greased microwave safe mug.
  • Add 1 or 2 spoons of nutella.
  • Microwave for 1 minute.
  • Serve warm or cold.

Notes

  1. Each microwave is different, so use according to your microwave watts.
  2. The sweetness is mild, if you want more sweet then add 1 tbsn extra sugar.
  3. Use freshly pressed juice for better taste.

 

Semiya / Vermicelli payasam

This is one variety of payasam which is so easy to make. This is special to me as my MIL appreciated a lot when I first made this. My daughter’s and husband’s favourite dish.😍😊 . This is must in most special occasions. I believe everyone likes this.

Ingredients

Roasted Vermicelli/ Semiya – 1/4 cup

Water – 3/4 cup

Whole milk – 1 cup

Sugar – as required

Cashews – few

Dried grapes – few

Ghee – 1 tbsn

Method

  • In a deep pan or sauce pan, add water.
  • When it starts boil add roasted Vermicelli.
  • When it’s half cooked, add milk and let cook in medium flame till Vermicelli is cooked. Stir occasionally so milk doesn’t burn.
  • After Vermicelli is cooked add sugar and let it cook for few more minutes.
  • Take it off from flame. Heat another pan. Add ghee, when it starts heat roast cashews and dry grapes till golden .
  • Add it to the payasam along ghee. Give a nice stir.
  • Serve warm or cold.

Notes

  1. You can use plain Vermicelli too. But roast in ghee before adding to water.
  2. To add more flavour, add crushed cardamom directly while add roasted cashews and dry grapes.
  3. This gets thick when cools down, so adjust water or milk accordingly.
  4. If it gets thick add warm milk to get desired consistency.

 

Grilled pineapple

I got my grill pan recently, so I was searching grilling recipes. As I had pineapple, I want to try grilled pineapple. But when I searched for the recipe, most of it used Rum😞 . So I just came with my recipe with a secret ingredient😉😊.

Ingredients

Pineapple – 4 rings ( peeled and cored)

Cooking spray – as required

For marination

Honey – 2 tbsn

Lemon juice – 1 tbsn

Cinnamon powder – 1/2 tsp

Nutmeg powder – 1/4 tsp

Method

  • Mix all the ingredients under ” for marination” in a wide bowl or plate.
  • Heat grill pan, spray cooking spray.
  • Marinate pineapple rings in the mixture and grill it for 2 minutes each side or as desired.
  • Serve warm with your favourite ice cream.

Home made dry fruits chocolate

Craving for some chocolate…then try this easy home made dry fruits chocolate.

Ingredients

Chocolate chips – 2 cups ( I used milk chocolate)

Butter – 2 1/2 to 3 tbsn

Dry fruits – I used pistachios and dry grapes

Method

  • Melt chocolate chips and butter using double boiler method.( melt chocolate chips in a bowl keeping over the pot of boiling water)
  • When it is completely melted, take out of the boiling water pot.
  • Add dry fruits and mix it.
  • Pour it in a baking tray or any deep dish.
  • Chill it in refrigerator till sets.
  • Serve in pieces.

Notes

  1. You can use any chocolate chips.
  2. You can melt chocolate in microwave too. First keep for 1 minute. And increase 1 minute stirring at regular intervals till melts completely.
  3. You can use any nuts of your choice.
  4. You can chop nuts roughly.

Rava/ Sooji mango payasam

It’s Onam in Kerala, India. It’s one festival all Malayali s wait for. Kids will have fun making ‘pookalam’. It’s an occasion of get together where they prepare elaborate feast to enjoy. Where ever in the world, for  Malayali this festival brings nostalgia to everyone. Happy Onam to all.

Coming to recipe, special occasion celebrate with special recipe. Usually I make vermicelli payasam or parupu payasam. But this time thought of trying something different and made rava mango payasam. It turned out good. Hope you will try.

Ingredients

Fine rava/ Sooji – 1/4 cup

Mango puree – 1 cup

Water – 2 cup

Whole milk – 2 cup

Sugar – 1 cup

Ghee – 1 tbsn

Cashews and dry grapes – few

Method

  • In a thick bottomed pan add ghee.Roast cashews and dry grapes till turns golden.
  • Keep aside. In same pan add rava and roast for few minutes.
  • Add water while stirring continuously so no lumps are formed.
  • Let rava gets cooked and add milk.
  • Let it boil. Stir occasionally so it doesn’t gets burned.
  • Add sugar. Let it boil till sugar dissolves.
  • Switch off the flame.
  • Let the payasam get warm. Add mango puree slowly stirring continuously.
  • Add roasted cashews and dry grapes.
  • Serve warm or cold.
