Beetroot Jelly using agar agar

Beetroot Jelly? Does it sounds wierd? Trust me it tastes so good if you love beetroot.Even if you don’t, try this. You will start loving it 😍.You want to give your kid healthy choice of eating their favorite snack, then try this, even no gelatin.You will never get store bought jelly again.

So here we go with the recipe. Hope you will try this.

Ingredients

Beetroot Juice – 1/2 cup ( see notes)

Sugar – 1 tbsn

Agar Agar – 3/4 tsn

Method

  • Take all ingredients in a pan. Heat it thoroughly till agar agar and sugar completely dissolved.
  • Have to keep stirring constantly.
  • When it’s completely dissolved, remove from heat and pour it in your moulds or a bowl. ( I did it in my mini muffins pan)
  • When it comes to room temperature, keep it in fridge till sets.
  • You can just scoop it from your moulds.
  • Serve chilled.

Notes

  1. For Beetroot Juice, I microwaved peeled beetroot chunks till soft. Blend it with little water in a blender and strain it.
  2. You can avoid sugar if you want. Beetroot itself have some sweetness.

Aloo / Potato poori

Kids are hard to please when it comes to feed. They don’t eat vegetables as such. It has to be disguised in the form of dish they like. So Mom’s like me have to think about incorporating vegetables in toddlers food in any possible way.

This dish came out of that thinking 😎😇. When I give my kids normal poori( deep fried Indian bread) and potato masala, they finish  only the poori. The masala will be abandoned in their plate😥. So I incorporated potato in the dough itself to make poori😉. They loved it. It’s a total win. Hope you also try this.

Ingredients 

Potato – 2  big ( I used golden variety)

Whole  wheat flour – 1 1/2 to 2 cups ( see notes)

Rava  / Semolina – 2 tsp

Turmeric  powder – 1/4 tsp

Chilli  powder – 1 tsp

Garam masala – 1/2 tsp

White  sesame seeds – 1/2 tsp

Salt –  as required

Water – as required

Oil – to deep  fry

Method 

  • Pressure  cook or microwave potatoes till cooked.
  • Peel the skin off. Mash it to smooth.
  • Add turmeric powder, red chilli powder, garam masala, sesame seeds and salt. Mix it.
  • Add flour and semolina mixture little by little till you form smooth but firm dough.
  • Sprinkle little water to knead.
  • Divide the dough  into small balls.
  • Roll the balls to 1/4 inch thick flat bread using rolling pin.
  • Heat oil in a pan. When the oil is hot, deep fry the rolled Puri in medium flame.
  • Slightly  immerse the Puri in oil using laddle. This helps the Puri to puff up.
  • When  one side is done ,turn the Puri using laddle.
  • When done remove it to paper towel.
  • Repeat  with other rolled puris too.
  • Serve as such or with your favorite gravy.

Chicken soup

I know winter is coming to an end and I’m posting soup at this time. But soup can be had in any season 😊. Chicken along with some veggies, this is so comforting with the flavor of ghee.

Ingredients

Chicken pieces – 6 to 8 ( preferably with bone)

Onions – 2 tbsn chopped

Carrot – 2 tbsn chopped

Ginger – 1 tbsn finely chopped

Garlic – 2 pods

Jeera seeds – 1/2 tsp

Turmeric powder – 1/4 tsp

Ghee  – 1/2 tsp

Water – 2 cups

Salt – as required

Method

  • Heat a pressure cooker pan. Add ghee.
  • When it melts, add jeera seeds. When jeera crackle add onions, ginger and garlic.
  • Saute’ for a minute. Then add carrots.
  • Give a stir. Add chicken pieces and turmeric powder.
  • Stir for two minutes. Add two cups of water and required salt. Cover the pan and pressure cook for 3 or 4 whistles.
  • Switch off. Open the lid after pressure released.
  • Shred the chicken using fork or laddle. ( You can skip this if you like)
  • Serve warm with required pepper powder.

  1. You can use oil instead of ghee.
  2. You can add peas, corn or beans along this.

Vermicelli/ Semiya upma

This is a simple, easy yet yummy breakfast. You can always have your choice of veggies to make it more healthier.

Ingredients

Roasted Vermicelli – 1 cup

Onions – 1/4 cup thinly sliced

Carrot – 1 grated

Green peas – 2 tbsn ( fresh or frozen)

Dry red chilli – 2

Curry leaves – few

Channa dal – 1 tsp

Mustard seeds – 1/2 tsp

Turmeric powder – 1/8 tsp

Salt – as required

Oil – 1 tsp

Ghee – 1 tsp

Method

  • Heat oil in a pan. Crackle mustard seeds and add channa dal.
  • When it turns golden, add onions, dry red chilli and curry leaves.
  • Saute’ till onions turns translucent.
  • Add carrot and peas. Add turmeric powder and give a nice stir.
  • Cover and cook for few minutes.
  • Add 2 cups of water. Add salt.
  • Let water start boiling. Slowly add roasted Vermicelli along stirring.
  • Stir vermicelli thoroughly.
  • Cover and cook in medium flame till water evaporates or vermicelli is cooked.
  • Add ghee and switch off. Give a stir.
  • Serve warm.

Notes

  1. If you don’t have roasted Vermicelli, just roast normal vermicelli in ghee or oil till golden before adding.
  2. You can add veggies like corn, beans etc.

 

 

 

 

Eggless Whole wheat Ragi Chocolate cake

When I was looking for a cake to try my hands on first time, I stumbled upon this Whole wheat Ragi chocolate cake. I decided to give a try as it is super healthy. I did adjusted a little with the ingredients. It turned to be super good. Kids loved it. You can have it as dessert or pack in snack box for kids.

This Valentine’s day bake this healthy yummy cake for your loved ones.

Ingredients

Whole wheat flour – 1 cup

Ragi/ Finger millet flour – 1/2 cup

Sugar – 3/4 cup

Coconut milk – 1/4 cup

Salt – a pinch

Baking powder – 1 1/2 tsp

Baking soda – 1/2 tsp

Yogurt – 3/4 cup

Vegetable oil – 1/2 cup

Any chocolate health drink powder – 1/4 cup

Vanilla extract – 1 tsp

Method

  • Preheat oven to 350°F. Grease 9×9 pan with butter or oil.
  • Sift whole wheat flour, ragi flour, salt, baking powder, baking soda, chocolate health drink in a bowl.
  • In another bowl mix yogurt, oil , coconut milk, sugar and vanilla extract.
  • Mix thoroughly till the sugar dissolves.
  • Then add flour mixture slowly and mix till all blend together.
  • Pour the batter in greased pan and bake to 20 – 25 mins or till tooth pick inserted in cake comes out clean.
  • Let it cool down completely before taking out of the pan.

Eggless Whole wheat ragi chocolate cake

Notes

  1. In original recipe she used jaggery and honey but I used sugar. And I replaced coconut milk in the place of milk.
  2. You can check the cake in-between 20 – 25 mins as each oven works differently. Mine was ready in exactly 25 mins.
  3. You can add any nuts of your choice.
  4. You can even frost the cake after completely cooling down.

Thin crust Bread pizza on Stove top

Craving for Pizza? Can’t wait too long? Try this quick thin crust Bread pizza. This can be ready within minutes with handful of ingredients readily available. You can top it with your desired toppings.My version have no Italian seasonings. If you have you can add it to enhance flavor.

You can have this as breakfast or as evening snack.Kids will love it and ask for more.

Ingredients

Whole wheat bread – 1

Mixed veg Topping – 1/2 cup ( I used chopped onions, tomatoes, spinach, capsicum,corn kernel)

Tomato Sauce – 2 tbsn or As required

Grated mozeralla  Cheese – As desired

Chilli flakes – To add when serve

Method

  • Roll whole wheat bread to thin using rolling pin.
  • Heat tawa or pan. Toast bread for one minute each side.
  • Remove it to a plate. Apply tomato sauce, top it with veggies. Top it with required amount of cheese.
  • Place it on the pan again. Cover it with a lid and cook in medium flame till cheese melts.
  • Serve warm with chilli flakes on it.

  1. You can use any veggies you like.Chop the veggies finely.
  2. You can use pizza sauce in the place of tomato sauce.
  3. You can add Italian seasonings.
  4. You can use any variety of bread.
