Kerala Vegetable Stew

Today I give you a recipe from my homeland, a Stew. There are lots of types of stews, both vegetarian and non vegetarian. Our today’s recipe is vegetarian ☺. This is one of my favorite. This is so simple, easy yet full of flavor of coconut milk.

I used canned coconut milk here. But I say if you can,use fresh coconut milk, you can get more flavorful stew😊.

Ingredients

Potato – 1 big or 2 medium sized

Carrot – 1 big

Onion – 1/2 cup chopped

Ginger – 1/2 tbsn chopped finely

Green chilli – 2 or 3 slit lengthwise

Thick Coconut milk – 1 cup

Salt – as required

Curry leaves – few

Coconut oil – 1 tsp

Method

  • Boil or pressure cook potatoes and carrots till cooked. Not mushy. (If pressure cook just till 2 whistles)
  • Peel the skin and chop it to small cubes.
  • In a pot, add 1 to 1 1/2 cups of water.
  • When it starts to boil, add chopped onions, ginger and green chillies.
  • When the onions turns transparent, add cubed potato and carrot.
  • Add salt and slightly mash one or two potatoes. This gives little thickness to the stew.
  • When it thoroughly boils and raw smell of onions are no more, simmer the flame and add coconut milk.
  • Stir well. Do not let it boil severely after adding coconut milk. Just 1 or 2 minutes.
  • Add Curry leaves and drizzle coconut oil.
  • Switch off the flame and cover the pot with lid. This helps to lock the flavor of coconut oil and curry leaves in stew.
  • Serve warm with Appam, idli or dosa.

Now coming to today’s recipe, I made a Vanilla Chocolate Marble cake . I used NAMASTE FOODS VANILLA CAKE MIX. Their cake mixes have a speciality. They can make TWO cakes in the price of one. Isn’t that  cool😎?I made one cake according the baking instructions in the package.

As I want to give justice to the ingredient, I didn’t alter much but only adding cocoa to the chocolate batter. The cake is so moist, spongy. All in our family loved it 😊. My daughter who is picky even in cakes loved this. That’s when I came to decision that this product is a keeper.

INGREDIENTS

Namaste foods vannila cake mix – 2 1/2 cups

Eggs – 2 room temperature

Oil – 1/3 cup ( i used vegetable oil)

Water – 1/2 cup

Cocoa powder – 1/4 cup

METHOD

  • Preheat oven at 350°
  • Take all ingredients except cocoa powder in a bowl.
  • Mix thoroughly without lumps.
  • Divide half the batter to another bowl.
  • Add cocoa powder to it and mix thouroughly.
  • Grease a 8″ square pan. First pour half Vanilla batter to it. Then half chocolate batter. Then Vanilla , then chocolate .
  • Run a knife along the batter to make marble pattern.
  • Pat the pan to remove any air bubbles.
  • Bake it in pre heated oven for 20 – 25 minutes. Mine was ready in exactly 22 minutes.
  • Serve warm. If you like to frost, cool the cake completely before frosting.

Kara Paniyaram/ Savoury non fried dumplings

Today’s recipe is an easy, quick snack or breakfast or dinner as we do. The only thing you have to have is Idli / Dosa batter. If you have the batter already, you can make this in jiffy.

Ingredients

Idli / Dosa batter – 5 cups or as needed

Carrots – 1 big size or 2 medium grated finely

Onions – 1/2 cup finely chopped

Dry Red chillies – 2 broken

Mustard seeds – 1/4 tsp

Channa dal – 1/2 tsp

Salt – as needed

Oil – 1 tsp to saute veggie and as needed to make paniyaram

Method

  • Heat oil in a pan. Crackle mustard seeds and add channa dal.
  • When it turns golden add onions and broken red chilies.
  • Saute till onion turn translucent.
  • Add grated carrots and stir for few minutes. Add required salt and switch off.
  • Add this mixture to the batter. Mix thouroughly.
  • Now heat a Paniyaram pan. Add a tsp of oil in each hole.
  • When its hot, drop a big spoon of batter to each hole.
  • When one side is cooked ,flip other side using knife of skewer.
  • Cook until both sides turn golden.
  • Serve with your favorite chutney or Sambar.

Notes

  1. Instead of dry red chilli, you can add chopped green chillies.
  2. You can add chopped Curry leaves and coriander leaves.

Moongdal/ Split green gram Sambar

I have earlier posted various sambar recipes . This is different from them . Today I give you sambar made of moongdal or split green gram dal. It tastes different from Toor Dal in which normally sambar are made.

Ingredients

Moongdal / Split green gram dal – 3/4 cup

Mixed veggies – 1/2 cup ( I used cauliflower florets, carrots and potatoes)

Onion – 1/4 cup chopped

Tomato – 1 medium sized chopped

Turmeric powder – 1/4 tsp

Sambar powder –  1 1/2 tbsp

Asafoetida – a generous pinch

Salt – as required

Tamarind – a small lemon size

To temper

Oil – 1 tsp

Ghee – tsp

Mustard seeds – 1/2 tsp

Jeera seeds – 1/4 tsp

Curry leaves – few

Coriander leaves – few

Method

  • Soak tamarind in 1/2 cup water. Extract tamarind pulp. Keep aside.
  • Pressure cook moongdal with required water for 2 whistles.
  • Add all cubed veggies, onions and tomatoes to cooked moongdal.
  • Add turmeric powder, sambar powder and Asafoetida. Add required water.
  • Let the veggies get cooked in medium flame. I don’t pressure cook after adding veggies.
  • When the veggies are cooked, add tamarind pulp and required salt.
  • Let it boil. When the raw smell of tamarind goes, remove the pan from flame.
  • Heat oil and ghee in another pan. Temper all ingredients under ‘ to temper’ and add to the cooked sambar.
  • Serve along with hot rice , idli, dosa or pongal.

Moongdal Sambar

 

Notes

  • You can add veggies of your choice.
  • If you don’t have Sambar powder, add 1 tsp of red chilli powder and 2 tsp of coriander powder.
  • Adjust spice level up to your palatte.
  • Spice level I given here is mild.

Beetroot Jelly using agar agar

Beetroot Jelly? Does it sounds wierd? Trust me it tastes so good if you love beetroot.Even if you don’t, try this. You will start loving it 😍.You want to give your kid healthy choice of eating their favorite snack, then try this, even no gelatin.You will never get store bought jelly again.

So here we go with the recipe. Hope you will try this.

Ingredients

Beetroot Juice – 1/2 cup ( see notes)

Sugar – 1 tbsn

Agar Agar – 3/4 tsn

Method

  • Take all ingredients in a pan. Heat it thoroughly till agar agar and sugar completely dissolved.
  • Have to keep stirring constantly.
  • When it’s completely dissolved, remove from heat and pour it in your moulds or a bowl. ( I did it in my mini muffins pan)
  • When it comes to room temperature, keep it in fridge till sets.
  • You can just scoop it from your moulds.
  • Serve chilled.

BEETROOT JELLY

 

Notes

  1. For Beetroot Juice, I microwaved peeled beetroot chunks till soft. Blend it with little water in a blender and strain it.
  2. You can avoid sugar if you want. Beetroot itself have some sweetness.

 

Aloo / Potato poori

Kids are hard to please when it comes to feed. They don’t eat vegetables as such. It has to be disguised in the form of dish they like. So Mom’s like me have to think about incorporating vegetables in toddlers food in any possible way.

This dish came out of that thinking 😎😇. When I give my kids normal poori( deep fried Indian bread) and potato masala, they finish  only the poori. The masala will be abandoned in their plate😥. So I incorporated potato in the dough itself to make poori😉. They loved it. It’s a total win. Hope you also try this.

Ingredients 

Potato – 2  big ( I used golden variety)

Whole  wheat flour – 1 1/2 to 2 cups ( see notes)

Rava  / Semolina – 2 tsp

Turmeric  powder – 1/4 tsp

Chilli  powder – 1 tsp

Garam masala – 1/2 tsp

White  sesame seeds – 1/2 tsp

Salt –  as required

Water – as required

Oil – to deep  fry

Method 

  • Pressure  cook or microwave potatoes till cooked.
  • Peel the skin off. Mash it to smooth.
  • Add turmeric powder, red chilli powder, garam masala, sesame seeds and salt. Mix it.
  • Add flour and semolina mixture little by little till you form smooth but firm dough.
  • Sprinkle little water to knead.
  • Divide the dough  into small balls.
  • Roll the balls to 1/4 inch thick flat bread using rolling pin.
  • Heat oil in a pan. When the oil is hot, deep fry the rolled Puri in medium flame.
  • Slightly  immerse the Puri in oil using laddle. This helps the Puri to puff up.
  • When  one side is done ,turn the Puri using laddle.
  • When done remove it to paper towel.
  • Repeat  with other rolled puris too.
  • Serve as such or with your favorite gravy.
