Chicken soup

I know winter is coming to an end and I’m posting soup at this time. But soup can be had in any season 😊. Chicken along with some veggies, this is so comforting with the flavor of ghee.

Ingredients

Chicken pieces – 6 to 8 ( preferably with bone)

Onions – 2 tbsn chopped

Carrot – 2 tbsn chopped

Ginger – 1 tbsn finely chopped

Garlic – 2 pods

Jeera seeds – 1/2 tsp

Turmeric powder – 1/4 tsp

Ghee  – 1/2 tsp

Water – 2 cups

Salt – as required

Method

  • Heat a pressure cooker pan. Add ghee.
  • When it melts, add jeera seeds. When jeera crackle add onions, ginger and garlic.
  • Saute’ for a minute. Then add carrots.
  • Give a stir. Add chicken pieces and turmeric powder.
  • Stir for two minutes. Add two cups of water and required salt. Cover the pan and pressure cook for 3 or 4 whistles.
  • Switch off. Open the lid after pressure released.
  • Shred the chicken using fork or laddle. ( You can skip this if you like)
  • Serve warm with required pepper powder.

Notes

  1. You can use oil instead of ghee.
  2. You can add peas, corn or beans along this.

Vermicelli/ Semiya upma

This is a simple, easy yet yummy breakfast. You can always have your choice of veggies to make it more healthier.

Ingredients

Roasted Vermicelli – 1 cup

Onions – 1/4 cup thinly sliced

Carrot – 1 grated

Green peas – 2 tbsn ( fresh or frozen)

Dry red chilli – 2

Curry leaves – few

Channa dal – 1 tsp

Mustard seeds – 1/2 tsp

Turmeric powder – 1/8 tsp

Salt – as required

Oil – 1 tsp

Ghee – 1 tsp

Method

  • Heat oil in a pan. Crackle mustard seeds and add channa dal.
  • When it turns golden, add onions, dry red chilli and curry leaves.
  • Saute’ till onions turns translucent.
  • Add carrot and peas. Add turmeric powder and give a nice stir.
  • Cover and cook for few minutes.
  • Add 2 cups of water. Add salt.
  • Let water start boiling. Slowly add roasted Vermicelli along stirring.
  • Stir vermicelli thoroughly.
  • Cover and cook in medium flame till water evaporates or vermicelli is cooked.
  • Add ghee and switch off. Give a stir.
  • Serve warm.

Notes

  1. If you don’t have roasted Vermicelli, just roast normal vermicelli in ghee or oil till golden before adding.
  2. You can add veggies like corn, beans etc.

 

 

 

 

Eggless Whole wheat Ragi Chocolate cake

When I was looking for a cake to try my hands on first time, I stumbled upon this Whole wheat Ragi chocolate cake. I decided to give a try as it is super healthy. I did adjusted a little with the ingredients. It turned to be super good. Kids loved it. You can have it as dessert or pack in snack box for kids.

This Valentine’s day bake this healthy yummy cake for your loved ones.

Ingredients

Whole wheat flour – 1 cup

Ragi/ Finger millet flour – 1/2 cup

Sugar – 3/4 cup

Coconut milk – 1/4 cup

Salt – a pinch

Baking powder – 1 1/2 tsp

Baking soda – 1/2 tsp

Yogurt – 3/4 cup

Vegetable oil – 1/2 cup

Any chocolate health drink powder – 1/4 cup

Vanilla extract – 1 tsp

Method

  • Preheat oven to 350°F. Grease 9×9 pan with butter or oil.
  • Sift whole wheat flour, ragi flour, salt, baking powder, baking soda, chocolate health drink in a bowl.
  • In another bowl mix yogurt, oil , coconut milk, sugar and vanilla extract.
  • Mix thoroughly till the sugar dissolves.
  • Then add flour mixture slowly and mix till all blend together.
  • Pour the batter in greased pan and bake to 20 – 25 mins or till tooth pick inserted in cake comes out clean.
  • Let it cool down completely before taking out of the pan.

Notes

  1. In original recipe she used jaggery and honey but I used sugar. And I replaced coconut milk in the place of milk.
  2. You can check the cake in-between 20 – 25 mins as each oven works differently. Mine was ready in exactly 25 mins.
  3. You can add any nuts of your choice.
  4. You can even frost the cake after completely cooling down.
