Matar panner grilled sandwich / Peas cottage cheese sandwich ( Left over yumminess)

Leftover happens in our houses occasionally. So always think about using those effectively. At that time this yummy dish came out of my mind😊. Totally loved the end result.👍🙂

Ingredients

Bread – 2 slices

Matar panner – as needed (Recipe here)

Butter – to smear

Method

  • Heat the grill pan, smear butter on bread.
  • Apply matar panner as required on one side of the bread.
  • Cover with another bread slice.
  • Grill till both sides are cooked.
  • Serve with favourite sauce.

Matar paneer/ Cottage cheese and peas in onion tomato gravy

Panner is an ingredient which most of the people love ( except my husband😉). There are lots of dishes using panner. This is a onion tomato based gravy. This goes well with any roti variety or Pulao.

Ingredients

Panner – 1 cup

Green peas – 1/2 cup ( I used frozen)

Onion – 1 cup chopped

Tomato – 2 medium sized chopped

Ginger garlic paste – 1/2 tsp

Turmeric powder – 1/2 tsp

Red chilli powder – 1 1/2 tsp

Coriander powder – 2 1/2 tsp

Garam masala – 1/2 tsp

Cumin powder – 1/2 tsp

Kasoori methi – a pinch

Salt – as required

Cashews – 4 or 5

Oil or butter – 2 tsp

Method

  • Cut panner to small cubes and drop in warm water till use.
  • Heat oil in a pan, sauté onion. When it turns translucent, add tomato and sauté till mushy.
  • Let it cool completely and grind along with cashews to smooth paste.
  • Heat oil or butter in the same pan, add ginger garlic paste. Sauté till raw smell goes, add ground onion tomato paste along required water.
  • Add all spice powders, let it boil till the raw smell goes.
  • Add green peas. Add water if required.
  • Let green peas get cooked. Add required salt and panner cubes.
  • Let the gravy coats well in panner cubes. Add kasoori methi. Let it boil for two minutes.
  • Switch off. Serve with roti or Pulao.

Notes

  1. I used frozen. You can also use dried or fresh. If using dried soak overnight and pressure cook before adding to gravy.

Apple fritters

When you have a toddler in home, it means you have many half eaten apples in your fridge🍎. Our house is not an exception☹️.

When I was thinking🤔 what to do with that other than apple juice and pancakes, fritters came to my mind😎💡. My daughter totally loved it and was asking for more. Hope you love it.

Ingredients

Wheat flour – 1 1/2 cup

Rice flour – 2 tbsn

Baking soda – 1/4 tsp

Sugar – 1/4 cup or more( depends on sweetness of apple)

Milk – 1/4 cup

Cinnamon powder – 1/2 tsp

Salt – a pinch

Water – as required

Apple – 1 grated

Oil – to deep fry

Method

  • Make batter with all ingredients except apple. The batter should be in consistency of pancake batter.
  • Then add apple. Mix gently.
  • Heat oil in a deep pan. When the oil is hot drop a spoonful of batter. Cook in medium flame till golden.
  • Serve warm.

Carrot chapathi/roti

I try to include veggies in most of the dishes my kids love. They both love chapathi/roti, so here I made carrot chapathi 😄. This goes well with any vegetable gravy or chicken gravy.

Ingredients

Whole wheat flour – 1 1/2 cup

Potato – 1 small or 1/2 big

Carrot – 2 medium sized

Salt – as required

Warm Water – as required to make dough

Oil / Butter – to smear

Method

  • Pressure cook or microwave peeled potato and carrot till cooked well. Mash it smooth and keep aside.
  • In a wide bowl, take whole wheat flour , mashed potatoes and carrots and required salt.
  • Mix thoroughly to give a crumbled texture.
  • Add water little by little and knead to a soft dough. Cover and let it rest for at least 30 minutes.
  • Divide the dough into small balls. Roll it out to thin roti using rolling pin.
  • Heat tawa. Smear butter or oil. Cook roti both sides till brown spots appear.

Ridge gourd/ Peerkankai stir fry

Ridge gourd is vegetable which comes in cucumber family. It has anti inflammatory effects. It’s rich in fibre. So if you are in diet to reduce your weight, include this vegetable in your diet. This is also called as Chinese Okra.

There are many yummy dishes made using ridge gourd. Here I give you a yummy stir fry.

Ingredients

Ridge gourd/Peerkankai – 1 medium sized

Onion – 1/2 cup finely chopped

Tomato – 1 chopped

Turmeric powder – 1/4 tsp

Red chilli powder – 1 tsp

Salt – as required

Mustard seeds – 1/2 tsp

Channa dal – 1 tsp

Oil – 1 tsp

Curry leaves – few

Method

  • Peel the ridges of the gourd using a peeler. Cut into half lengthwise, deseed and cut into small pieces.
  • Heat oil in a pan. Crackle mustard seeds.
  • Add channa dal. When it turns golden add onions and curry leaves.
  • When onion turns translucent add turmeric powder and red chilli powder.
  • Sauté for a minute. Add tomato and chopped gourd.
  • Give a stir. Cook covered in a medium flame. Do not add water.
  • When it’s half done add salt. Stir occasionally.The veggie oozes lots of water.
  • When it’s cooked, switch off.
  • Serve along with rice.

Egg less whole wheat apple pancake

Who loves pancakes for breakfast? Try this egg less apple pancake. You will love it. Kids will ask for more. It’s so melt in mouth with a mild crunchy apple.

Ingredients

Whole wheat flour – 1 cup

Banana – a half of big one or one small

Apple – 1/2 apple grated

Milk – 1/4 cup

Oil – 1 tbsn

Brown sugar / jaggery – 1/4 cup

Cinnamon powder – 1 tsp

Nutmeg powder – 1/4 tsp

Salt – a pinch

Butter – to smear

Water – as required ( to dilute)

Method

  • In a bowl mash banana. Add brown sugar/jaggery, cinnamon powder, nutmeg powder and salt. Mix well.
  • Add oil and milk. Mix it.
  • Add flour and mix well without lumps. Add water as required to make the required pancake batter consistency.
  • Add grated apple. Mix gently.
  • Heat a pan or tawa. Smear butter. Pour a laddle of batter and spread a little.
  • When one side is cooked, flip it over the next side and cook till done.
  • Serve warm with your favourite syrup.

Egg stir fry

This is so simple yet tasty stir fry. Can be made within few minutes. Goes well with any rice variety.

Ingredients

Eggs – 3 or 4

Onion – 1/2 cup finely chopped

Turmeric powder – 1/2 tsp

Red chilli powder – 1 tsp

Pepper powder – 1/2 tsp

Salt – as required

Curry leaves – few

Coriander leaves – few

Mustard seeds – 1/2 tsp

Channa dal – 1 tsp

Oil – 1 tsp

Method

  • Heat oil in a pan. Crackle mustard seeds, add channa dal.
  • When channa dal turns golden, add onions, curry leaves.
  • Sauté till onions turn transparent. Add turmeric powder, red chilli powder, pepper powder and salt.
  • When raw smell goes crack open eggs and mix continuously scrambling the eggs.
  • When it becomes dry add coriander leaves and give a mix.
  • Switch off. Serve warm with any rice variety.
