Honey roasted almonds

As the school days are back, I always concerned about the snacks to send in my daughter’s snack box. Usually I send nuts, but when I was looking to have a variation, these honey roasted almonds came to my sight. I gave this a personal touch by adding sea salt. I’m sure  kids will love it and you will be happy to send them healthy snack.

Ingredients

Almonds – 2 cups

Honey – 1/4 cup

Butter – 2 tbsn

Sea salt – to sprinkle

Method

  • In a pan add butter and honey.
  • Bring it to boil and simmer the flame for 2 minutes.
  • Add almonds and stir occasionally in simmer for 2 minutes.
  • Transfer the almonds to a plate with parchment paper.
  • Sprinkle sea salt over the almonds.
  • Let it cool completely.
  • Store it in airtight container.

Coriander / Cilantro chapathi

Bored of having same kind of chapathi? Try this so simple  but flavourful twist to enhance your chapathi/roti. No fancy ingredients. Hope you all give a try.

Ingredients

Whole wheat flour – 2 cups

Coriander/ Cilantro leaves – 1/4 cup finely chopped

Jeera – 1 tsp

Salt – as required

Warm Water – as required

Method

  • Add all ingredients except water and mix thoroughly.
  • Slowly add water little by little to knead a dough.
  • Let it rest for 30 minutes.
  • Divide dough into small balls and roll into a thin roti.
  • Heat a tawa and cook each side of roti till golden brown spots appear.
  • Serve along withEgg curry with coconut or Mushroom in roasted coconut gravy.

Notes

  1. Another variation of this is, you can substitute mint leaves for coriander leaves to make mint chapathi.

Stuffed Okra/ lady’s finger

When you want to try something different from same Okra dishes, then try this stuffed Okra. This goes well with any rice or even roti.

Ingredients

Okra/ lady’s finger – 8

Red chilli powder – 1 tsp

Turmeric powder – 1/4 tsp

Pepper powder – 1/2 tsp

Salt – as required

Lemon juice – 1 tsp

Method

  • Slit Okra lengthwise. Try not to split open.
  • Mix all spice powders along lemon juice to make paste.
  • Apply on Okra/ lady’s finger and stuff inside the slit.
  • Keep aside for 15 minutes.
  • Heat 2 tsp of oil in a pan and fry lady’s finger in medium flame till it cooks.
  • Serve warm.

Instant mango pickle

When you like to have pickle, you can make this instant mango pickle in no time. There is no waiting time for this. You can have it immediately after making.

Ingredients

Mango – 1 cup finely chopped

Red Chilli powder – 1 1/2 tsp

Salt – as required

To temper

Coconut oil – 2 tsp

Mustard seeds – 1 tsp

Methi seeds – 1/4 tsp

Curry leaves – few

Method

  • Mix all ingredients and keep aside.
  • Heat oil in a pan and add methi seeds, mustard seeds.
  • When mustard seeds crackle add curry leaves and add mango mix.
  • Stir gently till oil coats uniformly.
  • Let it be in heat for a minute and switch off.
  • Enjoy with curd rice or your favourite rice.

Notes

  1. Adjust chilli powder as per your requirement.
  2. You can also add dry red chilli while tempering.
  3. You can use any oil, but coconut oil is preferred. It gives nice flavour.
  4. I used half riped mango here as I like little sweetness in my pickle. You can use raw mango.
  5. Always use clean,dry spoon.
  6. Stays good for two days if stored in airtight container.

Water melon jelly

I love watermelon. I  can be in watermelon diet🍉. I just love it so much.So when I thought what fun recipe can I make with watermelon, this jelly came up on. Both jelly and watermelon are kids favourite, so how about watermelon jelly?😎

Ingredients

Watermelon puree – 1 cup

Water – 1 cup

Agar agar – 2 tsp

Sugar – 2 to 3 tbsn

Method

  • In a bowl add all ingredients except watermelon puree and stir.
  • On stove top stir this syrup till sugar and agar agar dissolves.
  • Once it dissolved, switch off and add watermelon puree  and mix well.
  • Pour it in a baking tray  or deep dish.
  • Keep it in refrigerator till sets.
  • Cut into small pieces and serve.

Coconut chutney with shallots

Idli and dosa are staple food in south Indian house. So we always think of different side dish to go with it. This is one of it. This is usual coconut chutney but with a twist in taste with shallots. Hope you all like this.

Ingredients

Coconut – 1/4 cup

Shallots – 3 or 4

Ginger – a small piece

Salt – as required

Method

  • Take all ingredients in a blender and blend till smooth with required water.
  • Serve with hot idli or dosa.

  1. This doesn’t need any temper.

Roasted gram dal / pottukadalai ladoo

These ladoos can be made in a jiffy. If you have surprise guests or to treat kids, this is an excellent choice. There is no doubt that  kids will love it. This is made within 10 minutes. Isn’t that great?😃

Ingredients

Roasted gram dal/ pottu kadalai – 1/2 cup

Sugar – 3 tbsn

Ghee/ clarified butter –  2 to 3 tbsn

Salt –  a pinch

Method

  • Take all ingredients except ghee in a mixer/ blender and blend till smooth powder.
  • Transfer the powder to a plate.
  • Add ghee little by little till you  are able to make ladoos.
  • Serve immediately.
